I am a summer girl all the way. I love warm weather, the sun, hanging out all day outside, I love it all. Camping during the summer in nothing but a bathing suit, the lake and the hot weather is my happy place. In fact, it I could I would turn up the heater during the cold winter days of 68 degrees just to make it feel like summer. However, I feel that as I have grown up and matured, at my wise old age, I have come to appreciate all the seasons and what they have to offer. Fall has arrived and I am loving every minute of it. There are a couple of things that I love about it so I decided to do a series of my Fall Loves. Currently I only have two in mind so dont be surprised if there are only two parts to this series, but it is my goal to have more. The first one I would like to talk about today is my love of Pumpkin Bread during this festive time. I love the way it tastes but mostly the way it fills your home with the small of warm pumkpin cinnamon goodness. So this morning I decided to make a couple of batches and spread the love by giving some away. I made a couple of regular sized loaves as well as some small individual loaves, which I love, they are the perfect size. So here is the recipe and some pictures.
Pumpkin Bread
3 Cups Sugar
1 Cup Coooking Oil
4 Eggs
3 1/3 Cups All-Purpose Flour
2 Teaspoons Baking Soda
1 1/2 Teaspoons Salt
1 Teaspoon Cinnamon
1 Teaspoon Nutmeg
2/3 Cup water
1 15 Oz Can Pumpkin
1. Grease the bottom of your loaf pan. In a very large mixing bowl beat sugar and oil with an electric mixer on med speed. Add eggs and beat well. Set aside.
2. In a large bowl combine flour, baking sodea, salt, cinnamon, and nutmeg. Alternately add flour mixture and water to sugar mixture, beating on low speed after each addition just until combined. Beat in pumpkin. Spoon batter into prepared pans.
3. Bake at 350 for 55 to 65 minutes or until wooden toothpick comes out clean.
