Hop on Pop

Mick loves Kevin. You can really see that there is a special bond. As a mom and a wife I love to see it. Mick will recognize Kevin coming in the door from work and gets really excited. You know the feeling, being so excited you dont know what to do so you just give out this half yell half squeal sound. Then climbing over and over and over and over Kevin is a favorite as well.

Nice Pants

Last week Adam and Alyssa were staying with us which means Mick was in our room seeing how Mick's room is the guest bedroom, his room and the office. Mick woke up pretty early as usual. After I got him up I noticed that he, well he needed new pants. He really needs pants on now a days because his little knees get rug burn from all his crawling around. Since all his clothes are in his room we had to improvise and make pants/leg warmers from a pair of Kevin's socks.

My baby is not a baby anymore! Today Mick turns one and I just cant believe it. Obviously this year has just flown by like I am sure many mommies out there can atest to. For the last couple of months Kev and I have been wondering when we have to stop calling Mick a baby, we decided on his birthday. So baby is out (at least in front of others, but in my head, still alive and kicking) and boy, kid, toddler (no too soon) is in. I am pretty sure he woke up this morning much bigger than when I put him down for bed last night. I am not sad that he is one, I am actually really happy. I love this age. He is into everything, loving all his toys and chasing after his friends that are already walking. I love to hear and see him laugh because of something I did or Kevin did (but mostly what I do jk). I love seeing him crawl around outside and letting him get dirty, for some reason I love that he has dirt under his nails. I know that might be weird but it makes me feel like he is really just getting out there and getting dirty. He has just grown so much in a year. What a blessing he is. God is so good. Trusting in Him that He will guide us in raising him is a nightly prayer and I know He is right along side us. Thank you Jesus.

French Toast

If you have been reading my blog for awhile or live with me you know that I find a favorite thing, it consumes for a time, and then as fast as it came into my life it leaves. This has happened with chicken quesadillas, Kevin's famous bagel sandwiches and other things that have long since been forgotten. I just hope that my new obsession never goes away.
My brother got me hooked onto Alton Brown, he is on the Food Network. Instead of just cooking, he also gives info on why certain foods go with what and how everything works together. He is kind of like Bill Nye the Science Guy for food. Anywhoo, Alton has this french toast recipe that is TDF.
Like you, I am a busy girl, or at least I have a one year old getting into everything leaving me very little time to make meals. I have simplified Alton's recipe (took out one step) to fit my schedule and I cant get enough of it. His is very timed out and I just kind of wing it. I think we have had french toast the last couple of Saturdays and this coming one does not look any different. If you want the exact instructions you can go here.
But I will give you mine if you want to make it fast.
The best part about this recipe is the bread. You want bread that has been sitting out for a little while, it helps to saok everything up. We usually have french or ciabatta bread with dinner some night and usually dont eat it all so this is perfect to save for the weekend breakfast. Cut it up the night before and let it sit out.
Mix together
3 eggs
2 Tbs honey (heat in microwave first)
half and half, if you have it, I have used milk or heaving whipping cream or whatever I have on hand
dash of vanilla and almond extract (I added this)
Then I just soak those puppies like nobodys business and put them on the skillet.
Alton puts his in the oven for a few minutes after the skillet, but I usually just skip this step. It turns out great either way.

Birthday Surprise

So yesterday I woke up with an extra little hop in my step, an extra twinkle in my eye, a feeling of "today is going to be a good day". All this extra joy was because yeterday was.................
My half birthday. That is right yesterday I turned 29.5. I had been reminding Kevin that my half birthday was coming up for some time now, I just didnt want it to hit him by surprise. He didnt say anything to me before he left for work, probably to build suspense. (It worked). Anyway, he called me that afternoon just to check in and see what I had been up to. I mentioned that I went to coffee with a friend and her boys and what a great half birthday I had been having. He sounded like he had forgotten about this special day. No worries I thought, it was probably time to wrap up this half birthday celebration of a day anyway. But when coming home from work, who comes home with a half birthday surprise? You guessed it, Kevin. My sweet husband had played into my ridiculous half birthday celebration and brought me home a cupcake. That is true love folks.
